Debbie's Hummus

 

  • 2 tbls sesame seeds
  • 2 large cloves of garlic chopped
  • ½ tps salt and ¼ tps. pepper
  • ½ cup of olive oil (the good stuff)
  • 1 Can (19 oz) of chick peas (drained and rinsed)
  • ¼ cup real lemon juice
  • 2 tbls of parsley

In a dry skillet toast sesame seeds on low until light brown.

(move em around with a wooded spoon bout 5 minutes)

In a food processor put the seeds, garlic, salt, pepper, and half of the oil (¼ cup) and process until smooth. Add chick peas, lemon juice and remaining oil process again until smooth. Fold in the parsley.

Note 1 : Maybe a splash more of lemon juice if needed to taste.

Note 2 : If you are using a blender, alternately add small amounts of chick peas, juice and oil.

Serve with pieces of pita bread cut like a pie and lightly toasted in the oven. Dip and eat.
