GRANDMA CLARAS HOT PEPPER SAUCE
1 recipe ¼ recipe 1 bushel small round HOT peppers 20 lbs 5 pounds 6 pounds onions 1 lb 1 gallon olive oil 1 quart 1 bunch basil small bunch 1 cup salt ¼ cup cook 14 --- 16 hours 7----8 hours wash
Wash and dry peppers grandma always did this because you don't want any water in the pot
slice onions and add olive oil, chopped basil and salt bring to a boil and simmer uncovered
stir it occasionally don't let it burnJARS Wash and dry small mason jars, lids and screw caps
Boil for 10 min. use clean tongs and spoons pour boiling water over them
Fill jars and wipe tops with clean paper towel Cover and place caps on turn over for 10 min then right side up
When they cool the lids should not pop if they do it must be refrigeratedGood luck grandma would be proud of you
